India is largely dispersed over the huge geographical area. Every region of India has its own special foods with which it has been recognised within India and abroad. Every major region of India brings its own unique dishes and subtle variations to popular dishes. India has plenty of festivals and celebrations. Food is an important part of any festival and the flavour of each is accentuated by the dishes that are closely associated with it.

Kashmiri cuisine has evolved over hundreds of years. The most notable ingredient in Kashmir cuisine is mutton, of which there are over 30 varieties. The food usually uses a lot of yogurt, oils and spices as such turmeric, but avoids onion, garlic, tomatoes, and chicken.
Punjabi cuisine can be non-vegetarian or completely vegetarian. One of the main features of Punjabi cuisine is its diverse range of dishes. There are certain dishes which are exclusive to Punjab, such as Mah Di Dal and Saron Da Saag (Sarson Ka Saag). The main masala in a Punjabi dish consists of onion, garlic and ginger. Tandoori food is a Punjabi speciality especially for non-veg dishes.
Bihari cuisine is predominantly vegetarian because traditional Bihar society influenced by Hindu and Buddhist values of non-violence did not eat eggs, chicken, fish and other animal products. 
Maharashtrian cuisine covers a range from being mild to very spicy dishes. Wheat, rice, jawar, vegetables, lentils and fruit form important components of Maharashtrian diet. Popular dishes include puran poli, ukdiche Modak and batata wada. The staple dishes of Maharashtrian cuisine are based on bread and rice.
Gujarati cuisine is primarily vegetarian. The typical Gujarati Thali consists of Roti, daal, rice, and sabzi. Cuisine can vary widely in flavor and heat, depending on a given family’s tastes as well as the region of Gujarat they are from.
A wide variety of Indian food is available to the people of US to choose from regional aspect so as to get perfect blend of taste. One can get the same food as it has been prepared in India.
